The Tiger Eye bean is a beautiful heirloom legume from South America, known for its golden-orange color with maroon swirls (resembling a tiger's eye), and its creamy, smooth texture with thin skins that nearly disappear when cooked. Excellent for soups, refried beans, chili, or as a fresh shelling bean. Also called Pepa de Zapallo, it's versatile and cooks relatively quickly, offering rich flavor and a buttery, melt-in-your-mouth quality, popular in both fresh and dried preparations.
