Also called Spring Onions, Welsh Onions resemble what you typically think of as green onions. But Welsh Onions have hollow stalks that you can use right up to the tip (whereas green onion stalks are often woody halfway up the stalk).
We harvest Welsh Onions by cutting them just above the root, so that they continue to produce throughout the season, and grow back the following year.
